Directions
Preheat the oven to 375°. Brush the bread with 3 tablespoons of olive oil and place on a rimmed baking sheet. Toss the tomatoes, olives, basil and salt together in a bowl, then drizzle with the remaining 3 tablespoons of oil.
Mound the tomato mixture on each bread slice and top with ricotta.
Bake until the bread is toasted and the topping is warmed through, about 10-15 minutes. Serve hot.
